Ingredients
1 can full fat coconut milk
1/2 cup plant milk
1/3 cup maple syrup
1/3 cup sugar
2 tbsp corn starch
1 tsp agar powder
1 tsp nutritional yeast
1 tbsp Mojave Dessert blend
1/2 tsp salt
Some sugar for the top
Method
Add all the ingredients to a blender and blend until combined.
Transfer to a pot and cook on medium heat while stirring until it starts bubbling. As soon as you see bubbles, remove from the heat, do not overcook.
The mixture should be thick, but pourable, like pancake batter.
Remove from the heat and transfer into 4 to 6 ramequins, depending on their size.
Let sit on the counter for 1 hour.
At that point, it should be nice and thick, like pudding.
You can brûler it if you want to serve them right away or store in the fridge and bruler it later before serving.
To make the sugar crust: add a thin layer of sugar on top of each creme brûlée and burn it with a torch until the sugar is melted and bubbly.
Wait 5 minutes and serve!
